Internet Mail Gateway or Local Delivery services stop

Hello everyone, first time posting in here, hopefully you guys can help!
We are running Scalix version 11.2
Everyone on this network that uses Scalix is a techie so there shouldn't be any PEBKAC stuff happening. We all run Outlook 2003 SP3 on Windows Vista Business 64 Bit.
When sending a calendar appointment or meeting request through Outlook, the appointment gets stuck in the Internet Mail Gateway or Local Delivery queue (depending on whether the appointment is headed inbound or outbound). Once this happens the respective service gets stopped and will only respond to a manual restart for 5-10 seconds. It will process regular email messages (including attachments) for 5-10 seconds when I manually start the service but then the service goes down again. The only that I have found to fix it so far is to clear the calendar messages out of the queues and restart the service. All works well until another calendar appointment is sent.
