Objective point all outgoing mail to a e-mail filtering service i.e. How do I set up out bound e-mail/smtp filtering? I need step by step instructions.

Don't have the time to give you step by step, but all outbound mail is running through sendmail on the Scalix server. So your hook is the MILTER interface for sendmail, and there are plenty of plugins available for this, as are how-tos.

Where can I find the step by step? ,said another way I am at ground zero regarding my knowledge of Scalix and how it works.

Another option would to hire a reputable firm to do the work.

I think you could just google for "sendmail" and the type of filtering you want to do, like attachment filtering or so. You should find tons of reference.
