Is there any documentation on what each and every service and daemon does that is listed in SAC?
Some are easy to figure from their names, others are not.
I tried to find the info in the documentation available, but could not find it.
If I missed it, please point me to the right document.

Not really documented. Most of them do internal house-keeping and controls other daemons/services, or provide internal services that are not used by the users directly. You can ask, and we can try to answer, though
