Do not understand what you worry about. The IP address of your incoming mail server is well known to the whole world : it's in your MX record (you can't receive email without it).
If you want to obfuscate your MTA version simply edit the smtpd.cfg file and change the value of the GREETING switch.

Anyway the received-from header is an RFC standard to help tracking messages routes.
