Transitiong to new scalix mail server with new domain

I am setting up Scalix to handle email for a company which is using a different domain name for their mail now than they will when using Scalix.
What is the best way to help them transition to the new Scalix mail server domain so that the old email addresses are simply forwarded to the new domain? I don't know that they can make use of the existing mail server on old domain since I believe they will want to stop paying for its use.. so the ideal would be an MX record solution on old domain DNS.
Do I have them set the MX record on the old domain to the new Scalix mail server on the new domain? Then I need to allow relaying from old domain on Scalix? Do we need identical mailboxes on the Scalix server as were on the old domain mail server?
I envision this being the final result:
email to john@olddomain.com ---> becomes john@newdomain.com and stays that way
And if someone could just point me to the file to allow relaying so I don't have to pour through the documentation I'd appreciate...
