emails delayed delivery

I have a user that has been getting some mails that are being delivered about 2 days late. It only occurs when the email is being sent to this user from another specific user. IF more than this person is copied on the email, the other recipients will receive it. When it is finally delivered it is stamped with the current time, not the time it was orginally sent. The recieving user is using outlook 2007 via imap, and the sender is using Outlook 2003 with the latest version of Outlook connector.
