Email routing on a single domain

Currently, we have multiple linux servers running amavisd-new with clamav and spamassasin scanning all mail coming in or out. Our domain's MX records point to these servers in a round-robin fashion. Our users' mail is stored on a linux server running sendmail (which actually sends the mail after it has been scanned) and Dovecot for IMAP/POP. We're starting to find this setup less than ideal.
We're considering a switch to Scalix and I'd like to set up a test group. At the moment, I've got mail going to another domain we own going to our test server. If I'm reading the documentation correctly, I should be able to change the MX records to our Scalix server and it will pick up the users on it and route the others to our existing mail setup. Do I understand this correctly? If not, could someone enlighten me please? Or, is there a better way I should know about?
What I'm really trying to accomplish, is a way to move a group of people over to this server and still be able to keep the same email address without disrupting service to our other users. So, mail sent to scalixuser@example.com ends up on the Scalix server, and mail sent to existinguser@example.com gets scanned by the smtp servers and ends up on the existing mail server just like to does right now.
