What does Postgre do?

I am running the backup script that is in the wiki (I think it's ombackup, it creates a tgz of each person's mailstore).

I haven't had to import one of these yet, but when I wander through the scalix directory on the server, I can find each person's directory, and in them is email messages. So I'm wondering, what does Postgre bring to the game? Does it store the "system settings" (users and their details, etc) but not email? Does Postgre store things like calendar entries, contacts, tasks??

I am being told to setup a second mail server of a competitor, and import a few mailstores and test it against Scalix. I just don't know how I would export all that person's calendar, tasks, etc. and then import it into the other mailserver. (I am thinking export from each user's desktop as a PST, then import it once an account is setup on the new mailserver. But this would be painful for someone with hundreds of mailboxes if they were forced to leave Scalix [I don't have hundreds!!])

The PostgreSQL-DB is just a cache to improve the speed of SWA. It is furthermore used by CalDAV and ActiveSync. Beside the sync-state for ActiveSync it doesnt contain more than the messagestore itself.
If you are not thinking about the Simpler Webb migration tool - and I am unsure if it is still maintained - you will not be able to migrate data from sxmboxexp/omcpoutu based backups.
But there are other solutions around which are able to migrate hundreds and more mailboxes to other systems.
