Wow, that's a more complex one.
First, robchoi is right - while a single Scalix instance supports multiple email domains, there are a few elements that are fundamentally shared in such an environment - certainly the most important being the System Direcory, which is the Scalix equivalent of Exchange's Global Address List (GAL). (Actually, for webclient use only it is possible to partition this as well because it uses LDAP access which can potentially be filtered, however, when using the Outlook/MAPI client to access the Scalix server, there is really only one central address list per server).
Therefore, this is usually the first question one has to answer - do we need multiple instances at all.
If multiple instances are needed, a few things must be considered.
1. Multiple Instances is an Enterprise Edition only feature, so it is not supported on community edition.
2. There are a few specific admin considerations in this environment, but that can usually be adressed by proper setup.
3. A Scalix instance is a full set of Scalix message store database files, processes, etc., so it is relatively heavyweight (same basic concept as multiple database instances on a single server, though not as heavy by absolute numbers!). Therefore, on a typical server, you will probably be able to run 10-15 instances with a solid number of users. The exact sizing will depend on user numbers and client types as different client types have different server load footprints.
