Since source code is not being released for the Outlook Connector and Scalix Web Access, if I download the open source server components, can I use those clients with it?

Yes you can. Although the Outlook Connector and Scalix Web Access will not be made available as source code, you will be able to mix and match binary downloads (for example Community Edition) and Open Source components to build your own customized system. Scalix Web Access is based on Java technology, so not providing this in source code form will not affect portability.
