The command you'll want to create the backup is omcpoutu. Then omcpinu will re-import the user.
Personally, I create a new mailnode called RESTORE to pull the user back into, rather than deleting and recreating them. Then they can export the message they lost, and import it back both via outlook. Naturally, they could also just forward it to themselves, or whatever too.
I posted a script on here a little while ago which will search for the list of users in a mailnode, and then export them all out to individual files. It works well for me, but your mileage may vary.
