I don't believe this is possible... (English or German only).

I found files : strings_en_US.xml ad strings_de_DE.xml with all interface strings.
I suppose I have to create my own strings_xx_XX.xml with xx as my country code.
But how force Webmail to use it ?
I can't imagine it's hard-coded.

It actually is hard-coded. The only way to "force" SWA to be in another language is to overwrite either the strings_en.xml file or the strings_de.xml file. I have done this for a Russian version and it works pretty well. Of course this is not a supported configuration, but if you still wish to do it keep in mind that some menus will still display in English and subject line will not support certain character sets. Also SWA will still display English/German as your language choices on the language setting pull down, and some menus will not auto adjust to the new string length (this will be fixed in the next release).

Cheers,
Yuri
